Beef Tips and Rice

Beef tips and rice is a hearty and satisfying dinner! The beef tips are cooked until they are melt-in-your-mouth tender, and the peppers and onions add a delicious flavor. This one-pot recipe is easy to make and filled with real food ingredients. It is also great for leftovers!

Ingreadient

    • 2 pounds beef tips (sliced into 1 inch cubes)
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • ½ tsp sea salt
    • ½ tsp black pepper
    • 2 tbsp olive oil
    • 3 tbsp unsalted butter
    • 1 green pepper (sliced)
    • 1 red pepper (sliced)
    • 1 onion (diced)
    • 3 cups beef broth
    • 2 tbsp coconut aminos
    • 2 tbsp tapioca flour
    • 2 cups brown rice

Step by step

    1. To start, place the beef tips in a bowl. Sprinkle with salt, pepper, garlic powder, and onion powder. Toss until the beef is fully seasoned.
    2. In a large pan, add the olive. Heat over medium until hot. Pan sear the steak on all sides. Then, place the meat on a plate.
    3. Add the butter to the pan. Once melted, add in the onions and bell peppers. Cook for 5 to 6 minutes, until tender.
    4. Next, add in the broth and coconut aminos. Place the beef tips back in the pan. Bring to a boil. Then, reduce the heat to low. Place a lid on the pan.
    5. Lightly simmer for 1 to 2 hours, or until the beef is tender. Just before serving, make the brown rice according to the package instructions.
    6. Once the beef is tender, make the slurry. Take about ¼ cup of the liquid from the pan and add it to a small bowl. Mix in the tapioca flour, creating a creamy sauce. Stir this back into the pot.
    7. Stir until the gravy sauce has thickened.
    8. Finally, serve! Add the brown rice to a plate. Top with beef tips, peppers, onions, and gravy.
