Ingreadient

    • 2 tbsp olive oil (divided)
    • 3 boneless skinless chicken breasts
    • 1 tsp cumin
    • 1 tsp paprika
    • 1 tsp garlic powder
    • ½ tsp sea salt
    • ½ tsp black pepper
    • ½ tsp oregano
    • ½ tsp chili powder
    • 2 bell peppers (thinly sliced)
    • 1 onion (thinly sliced)
    • 1 tsp lime juice
    • tortillas (to serve)
    • guacamole (to serve)
    • salsa (to serve)

Step by step

    1. First, add 1 tablespoon olive oil to a large skillet over medium heat. While the oil heats, season the chicken.
    2. Use a meat mallet to pound out the chicken breast to ½ inch thickness. In a small mixing bowl, combine the cumin, paprika, garlic powder, salt, pepper, oregano, and chili powder. Rub this seasoning mix all over the chicken.
    3. Once the oil is hot, carefully place the seasoned chicken in the pan. Cook for 5 minutes. Carefully flip and cook for another 5 minutes, or until cooked through. Set the chicken aside.
    4. Add the remaining 1 tablespoon of olive oil, sliced peppers, and onions to the skillet. Cook over low medium heat for 10 minutes, stirring occasionally to prevent burning.
    5. Slice the chicken into long thin strips. Add the chicken back to the pan. Add in the lime juice. Stir together.
    6. Finally, serve these chicken fajitas with tortillas, guacamole, and salsa if desired.
