Creamy Kale Caesar Salad

If you're not normally a fan of kale, I highly recommend you give this Creamy Kale Caesar Salad recipe a try. The salad dressing makes this incredibly tasty that even your kids might enjoy it. It's the perfect side dish for almost any dinner.

Ingreadient

    • 1 bunch kale (any variety)
    • 1/3 cup walnuts (lightly toasted and roughly chopped (Pine nuts are a great alternative but only use 1/4 cup.))
    • ¼ cup sour cream
    • ¼ cup parmesan cheese (grated)
    • 3 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1 clove garlic (minced)
    • ¼ teaspoon salt
    • pepper (to taste)

Step by step

    1. Remove and discard large stems from the kale and shred the remaining leaves. Toss in a large bowl with the toasted walnuts and set aside.
    2. In a smaller bowl, whisk together the sour cream, cheese, olive oil, lemon juice, garlic, salt, and pepper. Pour it over the kale mixture and toss to coat. Serve immediately.
