Ingreadient

    • 8 oz whole wheat spaghetti
    • 2 tbsp olive oil
    • 1 small onion (finely chopped)
    • 2 cloves garlic (minced)
    • 1 bell pepper (thinly sliced)
    • 2 tbsp tomato paste
    • 1 tsp dried Italian herbs (such as oregano, basil, and thyme)
    • ½ tsp red pepper flakes (optional, for added heat)
    • salt (to taste)
    • pepper (to taste)
    • chopped fresh parsley (optional garnish)

Step by step

    1. First, cook the whole wheat spaghetti according to the package instructions until it is al dente. Drain and rinse it under cold water to stop the cooking process. Set it aside.
    2. Heat the olive oil in a large skillet or wok over medium heat.
    3. Add the chopped onion and minced garlic to the hot oil. Sauté for about 2 to 3 minutes until the onion becomes soft and translucent.
    4. Add the sliced bell pepper to the skillet. Stir-fry for about 2 to 3 minutes until the vegetables are slightly tender.
    5. Add the tomato paste, dried Italian herbs, and red pepper flakes (if using) to the skillet. Stir everything together until the ingredients are well coated.
    6. Add the cooked spaghetti to the skillet and toss everything together until the spaghetti and ingredients are well combined.
    7. Continue stir-frying for another 2 to 3 minutes to heat the spaghetti and blend the flavors.
    8. Taste and season with salt and pepper as needed.
    9. Remove the skillet from the heat.
    10. Finally, serve the fried spaghetti hot, garnished with chopped fresh parsley if desired.
