
Fried Spaghetti

- 8 oz whole wheat spaghetti
- 2 tbsp olive oil
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 bell pepper (thinly sliced)
- 2 tbsp tomato paste
- 1 tsp dried Italian herbs (such as oregano, basil, and thyme)
- ½ tsp red pepper flakes (optional, for added heat)
- salt (to taste)
- pepper (to taste)
- chopped fresh parsley (optional garnish)
Step by step
- First, cook the whole wheat spaghetti according to the package instructions until it is al dente. Drain and rinse it under cold water to stop the cooking process. Set it aside.
- Heat the olive oil in a large skillet or wok over medium heat.
- Add the chopped onion and minced garlic to the hot oil. Sauté for about 2 to 3 minutes until the onion becomes soft and translucent.
- Add the sliced bell pepper to the skillet. Stir-fry for about 2 to 3 minutes until the vegetables are slightly tender.
- Add the tomato paste, dried Italian herbs, and red pepper flakes (if using) to the skillet. Stir everything together until the ingredients are well coated.
- Add the cooked spaghetti to the skillet and toss everything together until the spaghetti and ingredients are well combined.
- Continue stir-frying for another 2 to 3 minutes to heat the spaghetti and blend the flavors.
- Taste and season with salt and pepper as needed.
- Remove the skillet from the heat.
- Finally, serve the fried spaghetti hot, garnished with chopped fresh parsley if desired.
