Healthy Pumpkin Bread

Ingreadient
- 1 cup pumpkin purée
- ⅓ cup coconut oil (melted)
- 3 eggs
- 1 tsp vanilla extract
- 1 ⅓ cups Paleo baking flour (see note)
- ½ tsp baking powder
- 1 tsp baking soda
- 1 cup coconut sugar
- 1 tsp cinnamon
- ½ tsp pumpkin pie spice
Step by step
- First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a bread pan with parchment paper.
- Combine the pumpkin purée, melted coconut oil, eggs, and vanilla extract in a large mixing bowl. Stir to combine.
- Next, add in the remaining ingredients. Stir to combine.
- Transfer the batter into the parchment-lined bread pan.
- Bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.
- Lastly, remove the healthy pumpkin bread from the oven. Cool for at least 1 hour before slicing into.
