Lime-Cilantro Quinoa Salad

Adapted from Joy of Cooking, this Lime-Cilantro Quinoa Salad is the perfect addition to your summer meal plan. Everyone seems to love it every time I bring it to a potluck or BBQ, so it's a very versatile and well-loved dish. It's loaded with dried fruit, pine nuts, and bell peppers for tons of flavor.

Ingreadient

    • 3 cups quinoa (cooked (or 1 cup dry))
    • ¾ cup dried fruit ((we used raisins, golden raisins, chopped dried apricots, and dried currants))
    • ¼ cup pine nuts (toasted)
    • ¼ cup cilantro (chopped)
    • 1 bell pepper (diced (any color))
    • ¼ cup lime juice
    • ¼ cup olive oil
    • 1 teaspoon Dijon mustard
    • 2 cloves garlic (minced)
    • 1 pinch salt
