- 1 cup pitted dates
- 1 cup unsweetened coconut flakes
- ½ cup melted dark chocolate
Step by step
- First, add a piece of parchment paper to a pan.
- Add the pitted dates and coconut flakes to a food processor or blender.
- Process for 30 seconds, until the mixture sticks together between your fingers.
- Form the mixture into flat discs and place them on the parchment lined pan.
- Use the end of a wooden spoon to form a hole in the middle of each cookie.
- Dip the bottom of each cookie in the melted chocolate. Place on the lined pan. Drizzle melted chocolate on top.
- Place the pan in the fridge for 20 minutes, until the chocolate has hardened.
- Finally, remove from the fridge and serve! Store leftovers in the fridge.
