Smoked Salmon Caesar Salad
This Smoked Salmon Caesar is a perfect light salad for the summer. Toss it with the creamy homemade Caesar dressing for a healthy meal.
Ingreadient
- 2 tablespoons olive oil
- 2 tablespoons mayonaise (I like “cleaner” brands such as Chosen Foods or Primal Kitchen)
- 2 1/2 teaspoons Dijon mustard
- 1 1/2 teaspoons lemon juice
- 1/2 teaspoon anchovy paste
- 1 clove garlic (minced)
- 1/8 teaspoon pepper
- 1 large head romaine lettuce (chopped)
- 4 ounces smoked salmon ((or smoked trout))
- 1/4 cup parmesan cheese (freshly grated)
- 2 green onions (chopped (white and green parts), optional)
Step by step
- Combine all ingredients and blend until smooth using a countertop or handheld blender.
- Toss the lettuce with the dressing until well coated and top with the salmon, parmesan cheese, and green onions (if using).
