Smoked Salmon Caesar Salad

This Smoked Salmon Caesar is a perfect light salad for the summer. Toss it with the creamy homemade Caesar dressing for a healthy meal.

Ingreadient

    • 2 tablespoons olive oil
    • 2 tablespoons mayonaise (I like “cleaner” brands such as Chosen Foods or Primal Kitchen)
    • 2 1/2 teaspoons Dijon mustard
    • 1 1/2 teaspoons lemon juice
    • 1/2 teaspoon anchovy paste
    • 1 clove garlic (minced)
    • 1/8 teaspoon pepper
    • 1 large head romaine lettuce (chopped)
    • 4 ounces smoked salmon ((or smoked trout))
    • 1/4 cup parmesan cheese (freshly grated)
    • 2 green onions (chopped (white and green parts), optional)

Step by step

    1. Combine all ingredients and blend until smooth using a countertop or handheld blender.
    2. Toss the lettuce with the dressing until well coated and top with the salmon, parmesan cheese, and green onions (if using).
