
Strawberry Crumble Bars
Strawberry Crumble Bars are a delicious treat with a shortbread crust, sweet strawberry filling and a crumbly topping. Easy to make with simple ingredients and perfect for sharing. Enjoy these bars as a snack or dessert anytime!

- 2 ¾ cups whole wheat flour
- 1 cup melted unsalted butter
- ½ tsp baking powder
- ½ cup pure maple syrup
- 1 tsp vanilla extract
- 3 cups fresh strawberries (or blueberries and raspberries)
- 3 tbsp tapioca flour
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp pure maple syrup
Step by step
- First, preheat your oven to 375 degrees Fahrenheit. Line a 9 inch square pan with parchment paper.
- First make the shortbread crust. Combine all crust ingredients in a mixing bowl. Stir until a cookie dough texture forms.
- Press ¾ of this mixture into an even layer in the lined pan. Reserve the remaining ¼ for the topping. Use a fork to poke holes in the crust.
- Bake the crust for 8 minutes. Remove from the oven.
- In a clean bowl, combine all of the filling ingredients. For a smoother texture, mash the berries. Stir until combined.
- Transfer this fruit mixture into the pan. Smooth into an even layer.
- Sprinkle the remaining crust on top of the fruit.
- Bake for 32 to 36 minutes, or until the topping is lightly golden brown and the filling is bubbly around the edges.
- Remove from the oven. Cool for 1 hour in the pan then carefully transfer to a wire rack to finish cooling.
- Finally, once fully cooled, slice into bars and enjoy!
