Super Easy White Gazpacho

This easy-to-make cold soup recipe is a twist on traditional gazpacho (which is made with tomatoes).

Ingreadient

    • 2 cups cucumber (peeled and roughly chopped (any variety))
    • 1 clove garlic (minced)
    • ½ cup parsley (flat-leaf, fresh)
    • 2 tablespoons white vinegar
    • ¼ teaspoon salt
    • 2 cups plain yogurt
    • ½ cup sour cream

Step by step

    1. Combine all ingredients in a blender or food processor and blend until smooth.
    2. Serve chilled and garnish with parsley leaves or cucumber slices. It is that simple!
