Vegan Cheesecake Bars

You will love these creamy Vegan Cheesecake Bars! They get their creaminess from cashews instead of cream cheese. These bars are filled with healthy nutrients, vitamins, and great flavors!

Ingreadient

    • 1 cup walnuts
    • ⅔ cup shredded coconut
    • 3 tbsp almond flour
    • 1 cup pitted dates
    • 1 tsp cinnamon
    • 1 tsp ground ginger
    • ⅓ cup grated carrot
    • 2 cups cashews
    • 1 tbsp lemon juice
    • ½ cup dairy free milk
    • ⅓ cup pure maple syrup

Step by step

    1. First, line an 8 inch by 8 inch square pan with parchment paper.
    2. In a food processor, add all of the crust ingredients. Process until a sticky and crumbly mixture is formed.
    3. Press this down into an even layer in the prepared pan.
    4. Next, add all of the filling ingredients to a blender. Blend until completely creamy, about 30 to 60 seconds.
    5. Pour this creamy mixture on top of the crust.
    6. Place the pan in the freezer. Freeze for 2 to 3 hours, or until the bars are completely set and no longer gooey.
    7. Finally, remove the pan from the freezer. Garnish with a little extra coconut on top if desired. Slice into bars!
