Barbecued sirloin steak with salsa verde
Sirloin is tasty, juicy and great for barbecuing. It’s served here with salsa verde – ideal for dining alfresco.
Ingreadient
- 2 x 150g Waitrose British or Hereford Sirloin Steaks
- 2 tsp nonpareille capers, drained
- 2 cloves garlic, roughly chopped
- 2 anchovy fillets in extra virgin olive oil, drained
- 25g pack basil, trimmed
- ½ x 25g pack parsley
- 4 tbsp olive oil
- 2 tbsp lemon juice
Step by step
- Light the barbecue or preheat the griddle on a high heat. In a blender, whizz together all the salsa ingredients to make a smooth sauce. Season.
- Spread 1/2 tbsp of salsa over the top of each steak. Cook the steaks for 1-2 minutes on each side, until well browned and the centre is cooked to your liking. Serve with the remaining salsa verde. A mixed tomato salad and buttered new potatoes make a lovely accompaniment, if liked.
