Burrata, mortadella & pesto focaccia

Pillowy focaccia filled with creamy burrata and garlicky mortadella – this sandwich is next-level delicious but so easy to make.

Ingreadient

    • 1 pack 2 x 80g Crosta & Mollica Focaccia Panini
    • 285g tub No.1 Burrata
    • 4 tbsp green pesto with basil
    • 75g pack Italian mortadella
    • 25g wild rocket

Step by step

    1. Preheat the oven to 200ºC, gas mark 6. Bake the focaccia according to pack instructions.
    2. Drain the burrata and place it in a bowl, then gently mix it until loose and broken into pieces.
    3. Spread each focaccia base with 2 tbsp pesto, followed by the mortadella slices, then the burrata. Season, finish with the rocket, sandwich with the focaccia tops and serve.
