Chilli lamb meatball bake

This simple weekday bake is on the table in 30 minutes.

Ingreadient

    • 500g Frozen Essential Grilled Vegetable Mix
    • 500g pack Essential 20 British Lamb Meatballs
    • 395g essential Waitrose Red Kidney Beans In Chilli Sauce
    • ½ pack essential Waitrose feta

Step by step

    1. Preheat the oven to 220ºC, gas mark 7. Spread the vegetable mix over a large roasting tin, cook for 5 minutes, then top with the meatballs and roast for 15 minutes more, stirring once, until the meatballs are turning golden and the vegetables are taking on some colour.
    2. Fold in the kidney beans and their sauce, and return to the oven for 5 minutes, or until bubbling and the lamb is cooked through with no pink meat.
    3. Crumble the feta over the tray to serve. Rice, toasted flatbreads, or a green salad, dressed with a little lime juice, would be ideal alongside.
