Chilli lamb meatball bake
This simple weekday bake is on the table in 30 minutes.
Ingreadient
- 500g Frozen Essential Grilled Vegetable Mix
- 500g pack Essential 20 British Lamb Meatballs
- 395g essential Waitrose Red Kidney Beans In Chilli Sauce
- ½ pack essential Waitrose feta
Step by step
- Preheat the oven to 220ºC, gas mark 7. Spread the vegetable mix over a large roasting tin, cook for 5 minutes, then top with the meatballs and roast for 15 minutes more, stirring once, until the meatballs are turning golden and the vegetables are taking on some colour.
- Fold in the kidney beans and their sauce, and return to the oven for 5 minutes, or until bubbling and the lamb is cooked through with no pink meat.
- Crumble the feta over the tray to serve. Rice, toasted flatbreads, or a green salad, dressed with a little lime juice, would be ideal alongside.
