Harissa lamb koftas with antipasti couscous

A quick and easy dinner recipe that can be easily adapted if you prefer more spice.

Ingreadient

    • 4 Minted lamb kebabs
    • 3 tsp Cooks’ Ingredients Harissa Paste With Lemon
    • 1 pouch cauliflower, kale and couscous
    • 1 pack Waitrose Summer Greek Salad Antipasti

Step by step

    1. Grill the kebabs according to pack instructions, then finish them on the barbecue, if liked.
    2. Baste with 2-3 tsp harissa paste towards the end of cooking, and let it caramelise on the meat.
    3. Warm the couscous pouch in the microwave according to pack instructions, then tumble it with the salad antipasti on a platter.
    4. Top with the kebabs and drizzle over a little more of the harissa, if you like things more spicy.
