Mango & passion fruit frozen lassi

This gratifyingly easy frozen yogurt by Ravinder Bhogal is just the thing if you need a last-minute pud. Serve with a ginger biscuit or extra passion fruit pulp spooned over, if you like.

Ingreadient

    • 450g pack frozen mango chunks
    • ½ unwaxed lime, zest and juice
    • 2 tbsp clear honey, to taste
    • 6 passion fruit, pulp only
    • 500g natural yogurt
    • 500ml rum (optional)

Step by step

    Put all the ingredients, apart from the lime zest, in a blender and whizz until smooth. Taste and add more honey, if you like. If you want a soft-serve consistency, serve straight out of the blender or, for a more traditional scoop, freeze in an airtight container. If you are freezing the lassi, you may want to use the full 4 tbsp honey as it needs more sweetness once frozen. Remove from the freezer 10 minutes before scooping. Scatter over the lime zest to serve.
