Raspberry & cardamom lassi
A lassi is a refreshing yogurt drink popular in South Asia. This makes a winning breakfast smoothie – use vanilla seeds or a pinch of cinnamon instead of the cardamom if you prefer.
Ingreadient
- 3 cardamom pods
- 150g No.1 Speciality Raspberries
- 1 tbsp mild-flavoured honey
- 300g low fat natural yoghurt
- 50ml skimmed milk
- 1 pint/s salt
- 100g ice cubes
Step by step
- Bruise the cardamom pods with a rolling pin and shake out the seeds; crush using a pestle and mortar or with a rolling pin on a chopping board. Put the crushed seeds in a blender with the raspberries (reserving 8 to garnish), honey, low-fat natural yogurt, skimmed milk, a tiny pinch of salt and the ice cubes. Blend on high speed for about 2 minutes until bright pink and smooth. Divide between 2 glasses and top with the reserved raspberries.
