Soft egg with anchovy toasts

This quick and easy breakfast is simple, yet very effective. It's tasty, so feels like a treat despite being a healthy start to the day.

Ingreadient

    • 1 Waitrose & Partners Free Range Omega 3 Rich Egg
    • 35g slice Waitrose & Partners Mixed Olive Ficelle bread
    • ¼ tsp unsalted butter, soft
    • ¼ tsp anchovy paste
    • chives, snipped, to serve

Step by step

    1. Bring a pan of water to the boil. Lower in the egg; reduce to a simmer for 5 minutes.
    2. Meanwhile, toast the bread. Mash the butter and anchovy paste together and spread over the hot toast. Sprinkle with chives and slice into soldiers. Serve alongside the egg.
