Sri Lankan pavlova with passion fruit & mango
Many Sri Lankans have made a home in Australia and at Christmas this is the festive pud of choice. It requires no cooking and is ready in 20 minutes, but looks and tastes delicious.
Ingreadient
- 300ml double cream
- 25 cardamom pods, seeds finely ground
- 1 Cooks' Ingredients Meringue Base
- 4 whole passion fruit
- 1 fresh mango, peeled, stoned and sliced
- 2 x 18g packs Urban Fruit Coconut Chips
Step by step
- In a large bowl, use a balloon whisk to whisk the cream and ground cardamom to almost stiff peaks.
- To assemble, spoon the cardamom cream onto the meringue base. Halve the passion fruit and scoop out the seeds. Decorate with the mango and passion fruit, scattering over the coconut chips as you go.
